Salt & Pepper Preview Beef Dishes

Brian’s Beef Stroganoff

Serves 6 to 8
Ingredients

  • 2 lbs. round steak, cut into 1-inch cubes
  • 4 Tbsps. butter
  • 1 medium onion, diced
  • ½- to-1 cup chopped celery
  • Salt & Pepper
  • 2 beef boullion cubes dissolved in 2 cups water
  • 1 to 2 cups mushrooms (fresh or canned)
  • 2 pints sour cream
  • Cornstarch (follow directions on package)
  • Nutmeg

Directions

    1. Melt butter in large skillet over medium-high heat.
    2. Add onions and celery; sauté briefly.
    3. Add beef; season w/Salt & Pepper; brown both sides of beef.
    4. Add bullion water, mushrooms.
    5. Simmer for about 20-to-30 minutes to reduce liquid by about a forth.
    6. Stir in sour cream in batches.
    7. Thicken beef mixture w/cornstarch if necessary.
    8. Add pinch of nutmeg.
    9. Serve over white rice.

Chef Tee’s Beef Tips w/Sour Cream & Pickles

Serves 4 to 6
Ingredients

  • 2 lbs. round steak, cut into 1-inch cubes
  • Olive oil
  • 1 medium onion, sliced
  • 1 tsp. flour
  • Salt & Pepper
  • 2 cups veal stock (can substitute beef stock)
  • 1 tsp. concentrated beef stock
  • 2 sprigs thyme
  • 2 heaping Tbsps. sour cream
  • Egg noodles (follow directions on package)
  • Garnish—sweet pickles and sour cream

Directions

  1. Coat large skillet w/oil; heat oil over medium-high heat.
  2. Add beef; brown both sides of beef.
  3. Add onions; season w/Salt & Pepper.
  4. Dust meat w/flour.
  5. Add stock; stir in concentrated beef stock.
  6. Add thyme.
  7. Simmer uncovered for 5-to-10 minutes.
  8. Stir in sour cream; remove sprigs.
  9. Serve over egg noodles; garnish w/pickles, sour cream.
