Chef Tee’s Grilled Okra, Corn & Tomatoes

Prep time: 5 minutes; cooking time: 15-to-20 minutes

  • 2 cups okra
  • 4 Tbsps. olive oil
  • Salt & Pepper to taste
  • 1 medium red onion, sliced
  • 2 cups uncooked corn kernels
  • 1 large tomato, chopped
  • 1 Tbsp. balsamic vinegar
  • Optional garnishes—sliced mint, grapefruit flavored olive oil


  1. In medium bowl, add okra, salt, 2 Tbsps. olive oil; toss.
  2. Place okra on hot grill; cook until golden brown (about 5-to-10 minutes); when done, chop.
  3. While okra cooks; heat large skillet over medium-high heat; add onions, corn; cook until lightly browned (5-to-10 minutes).
  4. Salt & Pepper to taste.
  5. Add 2 Tbsps. olive oil, tomato, grilled okra; cook until all vegetables are tender, not mushy (about 5 minutes).
  6. Toss in balsamic vinegar; garnish w/mint, grapefruit flavored olive oil.
