Roast squash seeds

Pumpkin seeds image courtesy of Brian Jackson @ flickr.comSquash is wonderful to eat in the fall and winter.  Roasted, sautéed, pureed in soup – the possibilities are endless.  Just don’t forget about the leftover squash seeds because they taste really good and are good for you.  Spread them out on a baking sheet, season them with salt and pepper, sprinkle a little nutmeg on top and bake them in a preheated 350°F oven until the seeds are toasty (about 15-to-20 minutes).  A great snack for the entire family! — Home Cook Brian Reeve
