Brian’s Seafood Tacos
Serves 4 to 6
Prep time: 10 minutes; cooking time: 10- to-15 minutes
Ingredients
- 1 lb. monkfish, cut into 2 or 3 fillets
- ½ lb. bay scallops
- ½ lb. shrimp, peeled, deveined, chopped
- 1 tsp. cilantro, chopped
- 2 Tbsps. vegetable oil
- Salt & Pepper
- 2 Tbsps. lemon juice
- Tzatziki
- Tortillas, heated
- Garnishes — chopped tomatoes, cilantro, lime juice
Directions
- Heat oil in medium skillet over medium-high heat.
- Pat fish dry; season fish w/Salt & Pepper; put in hot skillet; cook about 2-to-3 minutes per side (or until golden brown); cover, cook until fish is done.
- Remove fish from skillet; add scallops, shrimp, 1 tsp. cilantro, lemon juice to hot skillet; stir ingredients; cook a few minutes or until shrimp turns pink.
- Shred monkfish; carefully stir shredded pieces into seafood mixture in skillet.
- Assemble tacos in following layers
- 1st layer – tortilla
2nd layer – 1-to-2 spoonfuls of seafood mixture
3rd layer – 1-to-2 Tbsps. tzatziki
4th layer – garnishes (tomatoes, cilantro, lime juice)
