Chef Tee’s Apple Coleslaw
Serves 4 to 6
Prep time: 5-to-10 minutes; no cooking time
- 3 cups cabbage, thinly sliced
- 1 red apple, thinly sliced w/skin
- 1 Granny Smith apple, cored, thinly sliced w/skin
- 1 carrot, grated
- ½ cup red bell pepper, finely chopped
- 2 green onions, finely chopped
- 1/4 cup (or to taste)mayonnaise
- 1/4 cup (or to taste) brown sugar
- 1 Tbsp. lemon juice, or to taste
- In large bowl, combine cabbage, red apple, green apple, carrot, red bell pepper, green onions; set aside.
- In small bowl, mix together mayonnaise, brown sugar, lemon juice; pour over salad; toss to coat.
- Let sit for 15-to-20 minutes; drain.
