Chef Tee’s Apple Coleslaw
Serves 4 to 6
Prep time: 5-to-10 minutes; no cooking time 
Ingredients

  • 3 cups cabbage, thinly sliced
  • 1 red apple, thinly sliced w/skin
  • 1 Granny Smith apple, cored, thinly sliced w/skin
  • 1 carrot, grated
  • ½ cup red bell pepper, finely chopped
  • 2 green onions, finely chopped
  • 1/4 cup (or to taste)mayonnaise
  • 1/4 cup (or to taste) brown sugar
  • 1 Tbsp. lemon juice, or to taste

Directions

  1. In large bowl, combine cabbage, red apple, green apple, carrot, red bell pepper, green onions; set aside.
  2. In small bowl, mix together mayonnaise, brown sugar, lemon juice; pour over salad; toss to coat.
  3. Let sit for 15-to-20 minutes; drain.
  4. Enjoy!
