Baby Arugula & OJ Salad

Ingredients
- 3-to-4 cups baby arugula
- ½ cup red onion, sliced (optional)
- Juice from ½ orange
- 1 tsp. orange zest
- ½ cup rice wine vinegar
- ¼ cup olive oil
- Salt & Pepper to taste
Directions
- In large bowl, add all ingredients except baby arugula; whisk together.
- Add baby arugula; toss until leaves are lightly coated w/vinaigrette.
