Chef Tee’s Chana Masala
Serves 4
Prep time: 5-to-10 minutes; cooking time: 5-to-10 minutes
Ingredients
- 1/3 cup canola or vegetable oil
- ½ cup veggie sausage, crumbled
- ½ cup white onion, thinly sliced
- 2 Tbsps. garlic, diced
- 1 Tbsp. curry
- 1 tsp. cumin
- 2 (15 to 16 oz) cans garbanzo beans
- 5 oz pkg. spinach, chopped
- Salt & Pepper to taste
- Basmati rice (follow cooking directions on package)
- Naan
- Garnishes – chopped tomatoes, cilantro
Directions
- In large skillet, heat oil over medium-high heat.
- Add sausage; brown slightly (about 1 minute).
- Add onion; stir in curry, cumin; cook about 2 minutes.
- Add garbanzo beans w/juice from can; add spinach; carefully toss mixture; cook until spinach wilts (about 2 minutes).
- Salt & Pepper to taste.
- Serve over rice w/garnishes and naan.
