Chef Tee’s Grilled Okra, Corn & Tomatoes
Serves 4 to 6
Prep time: 5 minutes; cooking time: 15-to-20 minutes
Ingredients
- 2 cups okra
- 4 Tbsps. olive oil
- Salt & Pepper to taste
- 1 medium red onion, sliced
- 2 cups uncooked corn kernels
- 1 large tomato, chopped
- 1 Tbsp. balsamic vinegar
- Optional garnishes—sliced mint, grapefruit flavored olive oil
Directions
- In medium bowl, add okra, salt, 2 Tbsps. olive oil; toss.
- Place okra on hot grill; cook until golden brown (about 5-to-10 minutes); when done, chop.
- While okra cooks; heat large skillet over medium-high heat; add onions, corn; cook until lightly browned (5-to-10 minutes).
- Salt & Pepper to taste.
- Add 2 Tbsps. olive oil, tomato, grilled okra; cook until all vegetables are tender, not mushy (about 5 minutes).
- Toss in balsamic vinegar; garnish w/mint, grapefruit flavored olive oil.
